Simple Gluten Free Peanut Butter Cookies

These five ingredient gluten free, flour free, cookies are made easily in one bowl and ready in minutes. They can be easily modified to be made sugar free.
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 cups peanut butter
  • 2 eggs
  • 2 tsp baking soda
  • Optional: Hershey Kisses
  • ***check all ingredient packaging for gluten free labels**
  1. Heat oven to 325 degrees.
  2. Line cookie sheets with parchment paper.
  3. Put all ingredients in one bowl and mix well until everything is blended and texture is smooth.
  4. Drop onto lined cookie sheet in one inch balls.
  5. Dip fork into sugar and press a cross pattern into cookies.
  6. Bake for 7-9 minutes.
  7. Let cool 10 minutes.
  8. Press Hershey kiss lightly into cookie.
  9. Let cool one more hour before eating.
To make sugar free: Replace white sugar with Splenda and Replace Brown Sugar with Brown Sugar Blend Splenda
